Tetherow Resort in Bend has expanded its culinary offerings with the opening of a new fine dining restaurant, marking a significant addition to its hospitality services.
Restaurant Launch Details
The new establishment, named Solomon’s, began welcoming guests earlier this month. Located within the resort’s main lodge, Solomon’s aims to provide an upscale dining experience for both visitors and local residents. The restaurant’s menu features a selection of Pacific Northwest cuisine, with an emphasis on locally sourced ingredients and seasonal dishes.
Executive Chef and Menu Highlights
Executive Chef Rian Mulligan leads the culinary team at Solomon’s. Mulligan, who previously worked at several restaurants in the region, has crafted a menu that includes options such as elk tenderloin, Dungeness crab, and wild mushroom risotto. The restaurant also offers an extensive wine list, highlighting selections from Oregon and Washington vineyards.
Resort’s Commitment to Culinary Excellence
Tetherow Resort General Manager, Mac McCulloch, stated that the addition of Solomon’s reflects the resort’s ongoing commitment to enhancing guest experiences. “We wanted to create a dining destination that matches the quality and ambiance of the resort,” McCulloch said. He noted that the restaurant’s design incorporates panoramic views of the Cascade Mountains, providing a unique setting for diners.
Community and Visitor Engagement
Solomon’s is open to both resort guests and the public, with reservations recommended due to anticipated demand. The restaurant operates Wednesday through Sunday, serving dinner from 5 p.m. to 9 p.m. According to resort representatives, the opening of Solomon’s is expected to attract food enthusiasts from across Central Oregon.
Future Plans
In addition to Solomon’s, Tetherow Resort plans to continue expanding its amenities in the coming year. The resort currently features a golf course, lodging, and event spaces, and management has indicated that further enhancements to dining and recreational facilities are under consideration.
