SoNoMa, a newly opened fine-dining restaurant in Kyoto, is attracting attention for its innovative approach to Japanese cuisine. The establishment, which opened its doors in May, is located in the city’s Nakagyo Ward and aims to blend traditional Japanese flavors with contemporary techniques.
Location and Ambience
Situated in the heart of Kyoto, SoNoMa occupies a renovated machiya townhouse, offering a blend of classic architecture and modern interior design. The restaurant features an open kitchen, allowing guests to observe the chefs at work, and seats are arranged to provide an intimate dining experience.
The Tasting Menu
SoNoMa’s tasting menu consists of nine courses, each highlighting seasonal ingredients sourced from local producers. The meal began with a starter of fresh ayu (sweetfish) served with a citrus-infused sauce, followed by a sashimi course featuring kinmedai (golden eye snapper) and shima-aji (striped jack). The third course presented a clear soup with yuba (tofu skin) and bamboo shoots.
The fourth dish was grilled eel accompanied by sansho pepper, while the fifth course offered wagyu beef with wasabi and a soy-based reduction. The sixth course featured a medley of summer vegetables, and the seventh was a rice dish with sea urchin and pickled daikon. The meal concluded with a dessert of matcha ice cream and seasonal fruit.
Chef’s Vision
Head chef Takuya Sato stated that SoNoMa’s concept is to “showcase the essence of Kyoto’s culinary traditions while introducing new elements.” Sato, who previously worked at several Michelin-starred restaurants in Tokyo, emphasized the importance of using locally sourced ingredients and adapting classic recipes to modern tastes.
Reservations and Details
SoNoMa is open for dinner from Tuesday to Sunday, with seatings available at 5:30 p.m. and 8:00 p.m. Reservations are required and can be made through the restaurant’s official website. The tasting menu is priced at ¥18,000 per person, excluding tax and service charges.
