Several prominent hotels have launched exclusive bingsu menus featuring ingredients such as Jeju-grown melons, organic strawberries, and specialty teas. These offerings are designed to appeal to both local and international visitors seeking unique dessert experiences.
The Grand InterContinental Seoul Parnas has introduced a ‘Jeju Melon Bingsu,’ which uses melons sourced from Jeju Island. The dessert is topped with coconut ice cream and served with a side of condensed milk. According to the hotel, this menu item is available until the end of August.
Lotte Hotel Seoul is offering a ‘Premium Strawberry Bingsu’ that features organic strawberries, homemade strawberry syrup, and milk ice. The hotel states that the strawberries are sourced from local farms and the dessert is available throughout the summer season.
Focus on Quality and Presentation
In addition to fruit-based options, some hotels are presenting bingsu with specialty teas and artisanal toppings. Signiel Seoul has launched a ‘Green Tea Bingsu’ that incorporates matcha powder from Japan and is garnished with red bean paste and mochi. The hotel reports that this dessert is served in limited quantities each day.
Other hotels are emphasizing the visual appeal of their bingsu offerings. The Four Seasons Hotel Seoul has created a ‘Mango Bingsu’ served in a glass bowl, layered with mango puree, fresh mango slices, and whipped cream. The hotel notes that the dessert is designed to highlight the vibrant colors of the fruit.

Hotel representatives indicate that demand for premium bingsu has risen as guests seek distinctive dessert options during the hot summer months.
