Chef Shana Otto, who operates in Burlington, has received a nomination for a James Beard Award, marking a significant milestone in her culinary career that began with a food truck.
Early Beginnings in Mobile Cuisine
Otto’s culinary path started in 2016 when she launched her food truck, The Wandering Chef, in Burlington. She initially focused on serving locally sourced dishes, which quickly gained popularity among area residents. “I wanted to bring something different to Burlington, something that highlighted Vermont’s ingredients,” Otto said.
Transition to a Brick-and-Mortar Restaurant
After three years of operating the food truck, Otto opened a permanent restaurant location in 2019. The new establishment allowed her to expand her menu and further showcase Vermont produce. Otto noted, “Having a physical space gave us the opportunity to be more creative and consistent with what we serve.”
Recognition by the James Beard Foundation
In March 2023, Otto was named a semifinalist for Best Chef: Northeast by the James Beard Foundation. The recognition places her among a select group of chefs in the region. Otto expressed gratitude for the honor, stating, “It’s surreal to be recognized alongside so many talented chefs. It’s a testament to the hard work of our team and the support of our community.”
Commitment to Local Sourcing
Otto’s restaurant continues to prioritize local sourcing, working closely with Vermont farmers and producers. She believes that using local ingredients not only supports the community but also enhances the quality of her dishes. “We’re proud to highlight what Vermont has to offer,” Otto said.
