Tetherow Resort in Bend has expanded its culinary offerings with the opening of a fine dining restaurant, marking a new addition to the resort’s amenities.
The new establishment, Solomon’s, began welcoming guests on Friday. The restaurant is located within the main lodge at Tetherow Resort and features a menu focused on Pacific Northwest cuisine, highlighting regional ingredients and seasonal produce.
Executive Chef Rian Mulligan leads the kitchen at Solomon’s. Mulligan stated that the menu is designed to showcase the diversity of the region’s food sources, including seafood, game, and local vegetables. “We want to celebrate what the Northwest has to offer,” Mulligan said.
Solomon’s offers a range of dishes such as elk tenderloin, wild salmon, and mushroom risotto. The restaurant’s wine list emphasizes selections from Oregon and Washington, along with other West Coast producers.
The dining room features views of the Cascade Mountains, providing a backdrop for guests. According to Tetherow’s management, the addition of Solomon’s is intended to enhance the resort’s appeal to both visitors and local residents seeking a high-end dining experience.
Reservations for Solomon’s can be made through the Tetherow Resort website. The restaurant is open for dinner service Wednesday through Sunday.
