Pie Week offers an opportunity for food enthusiasts to enjoy a variety of pies, whether sweet or savory. To help celebrate, here are two recipes that can be prepared at home to mark the occasion.
Classic Chicken and Leek Pie
This traditional chicken and leek pie is a comforting dish, ideal for family meals. The recipe serves four people.
- 500g diced chicken breast
- 2 sliced leeks
- 1 chopped onion
- 2 tablespoons plain flour
- 300ml chicken stock
- 150ml double cream
- 1 tablespoon olive oil
- 375g ready-rolled puff pastry
- 1 beaten egg
- Salt and pepper to taste
To prepare, heat olive oil in a pan and cook the onion and leeks until soft. Add the chicken and cook until browned. Stir in the flour, then gradually add the chicken stock and cream. Simmer until the sauce thickens. Season with salt and pepper. Transfer the filling to a pie dish, cover with puff pastry, and brush with beaten egg. Bake at 200°C for 25-30 minutes, or until the pastry is golden.
Apple and Blackberry Pie
This apple and blackberry pie combines tart fruit flavors with a crisp pastry crust. The following ingredients are needed:
- 3 large peeled and sliced apples
- 200g blackberries
- 100g caster sugar
- 1 teaspoon ground cinnamon
- 375g shortcrust pastry
- 1 beaten egg
To make the pie, preheat the oven to 190°C. Roll out half of the pastry and line a pie dish. Mix apples, blackberries, sugar, and cinnamon, then place the mixture in the pastry-lined dish. Roll out the remaining pastry to cover the filling. Seal the edges and brush the top with beaten egg. Bake for 35-40 minutes, or until the pastry is golden brown.
